It's not easy eating vegetarian in Iran. The only consistent option I found was to go to Fastfood restaurants, they have pizza and always a vegetarian one (sometimes called sabzi). Just to add some additional info to Cardiff Jon's excellent post: In Bukhara , Budreddin is the cheapest place to eat (still expensive) and also had some of the nicest food. Tried getting a SIM card at TM Cell in Ashgabat (Russian bazaar). It's 30$ for foreigners. In Ashgabat: Etazh Pub (very close to Kuwwat Hotel) offers some vegetarian options (at least a pizza). English spoken.
In Mary: Gyzylgum Cafe has at least a vegetarian shashlik, different salads, french fries and possibly pizza as well. Wide selection, so probably more possibilities.
