In Ashgabat: Etazh Pub (very close to Kuwwat Hotel) offers some vegetarian options (at least a pizza). English spoken.

In Mary: Gyzylgum Cafe has at least a vegetarian shashlik, different salads, french fries and possibly pizza as well. Wide selection, so probably more possibilities.
