It's a little slow, IMO, and there's really not much to see/do in Khiva. Most people like Bukhara the most, as it has the most traditional feel without being as touristic as Khiva. Seasonal yurts will likely be gone from everywhere, though you may be able to stay at some fixed tourist yurt camps near Issyk-kul and Karakol. Visa free means visa free. You don't get a visa for Kazakhstan or Kyrgyzstan, and you don't need one, so there is no issue of re-entering on your "original visa." You get to the border and they let you in, no visa required.
