I want to ride a horse in Kazakhstan, I will stay in Almaty but I don’t know where to go from there as people barely speak English in Kazakhstan last I checked.

Just for a day? You can go to Lesnaya Skazka, that will be the easiest, with English-speaking staff and horse trails. No need for wheelin' and dealin', just get on the horse and off you go.
