Non wheat food in small towns?

How easy is it to find non-wheat food in smaller towns? I'm gluten intolerant and wondering how self-sufficient I will have to be. Potatoes and rice are fine. I'm thinking of going through Barskoon, Naryn, Baetov, Chaek, Kyzyl Oi, and everything in between. Actually following that bike route:

Most of what I found in rural Kyrgyzstan was with rice.

Nomads raise animals, so at its most basic meat and dairy are nomadic foods. Potatoes and wheat-based foods are the typical starches.

Most cyclists stock up in larger towns since village markets are unpredictable.
