Kyrgyzstan and Uzbekistan with two families

we are planning to visit Kyrgyzstan and Uzbekistan in August with two families (3 adults, 4 teenagers). Flights to Bishkek and return from Tashkent are booked! Exciting!
Now that we are looking into how to plan our trip, we have some questions we are hoping this community might help us with.
We are a little unsure about what would be best for transport. How easy is it to use e.g. shared taxi's with 7 people? Would renting a van be more practical and still affordable? Are there alternatives?
Second is the accommodation. We were used not to book ahead on our travels when it was just the two of us. But with seven people, again, this might become an issue. We mailed a CBT and they just responded to give them a call one day on beforehand and they would arrange it :) Do you think this is realistic?
We are also looking at what would be best to keep the teenagers happy. Fortunately they like to hike, so we are considering a multi-day hiking in Karakol or Son-Kol. Maybe there are other cool things to experience for them?

With a party that size it should actually make it a bit easier in terms of transport, as you can buy all the seats in 2 taxis and leave right away without waiting for other seats to fill up.

Similarly, I think the CBT advice is reasonable, as there is usually (significantly) more supply than demand. If worst comes to worst and CBT is full, you won't have much difficulty finding random people willing to make some money renting you a couple of rooms.
